This amazing dessert was served in a fishbowl, just like the other five courses. Inside was a crème Chiboust with sour red current jelly, almond praline, rice crackers and orange blossom bubbles. Topping it off was a disc of shaved ice infused with redwood stems.  Pretty imaginative and incredible tasty.
